<p>The Spanish tapas dish, Codorniz, is broiled quail with balsamic beurre blanc. The quail itself was broiled lightly so that the skin is not too tough to chew because there isn&#8217;t much meat in quail to begin with. With the little meat available in this small catch, it is quite tender with its unique game taste. The complimentary sauce that comes with the tapas is a thick and slightly sour paste as it is made from either the reduction of vinegar or white wine and shallots.</p>
